The Challenge of Africa

Can we take a moment to consider the Times' feature: In Epicurean New York, the Challenge of Africa. I suppose the article meant to correct misconceptions about "African" food (in the imagination of the newspaper's readers, Africa of course exists only as a conflated identity that merges all 53+ countries/territories into one neat little package) but in doing so, it takes the typical liberal elite stance and tries to fit the aforementioned problematic cuisine within those eclectic diners' discriminating tastes. Lucky us! With our "tough, tough meat" we should be thankful for the attempt. O, and I apologize for being such an inconvenience.
